Daftmill 2011 Single Cask No.97 is a rare UK-exclusive release from one of Scotland’s most sought-after farm distilleries. Produced at Daftmill Distillery on the family farm in Fife, this single malt showcases the distillery’s commitment to traditional, low-volume whisky production and complete control over its raw materials.
The whisky was made using Publican barley grown and harvested on the Daftmill farm in 2009. After being dried and stored on the farm, the barley was malted in Alloa in 2010 before being distilled at Daftmill in 2011. This single cask was filled into a first-fill Oloroso sherry butt on 11 December 2011 and matured on the ground floor of Daftmill’s traditional warehouse until bottling in January 2025.
Released exclusively for the UK market, this single cask was bottled at natural cask strength, natural colour and without chill filtration, preserving the whisky’s full character from the individual cask. With only 642 individually numbered bottles produced, this is a highly limited release for collectors and enthusiasts.
Combining estate-grown barley, long maturation and single-cask provenance, this Daftmill expression offers a rare insight into the character of this small Lowland farm distillery.
Colour
Deep amber with mahogany tones.
Nose
Rich and elegant, with aromas of dried fruits, toasted nuts and sherry sweetness. Notes of dark chocolate, polished oak and gentle spice develop alongside soft malt character.
Palate
Full and complex, showing layers of raisins, figs and caramel with warming baking spices, roasted nuts and rich oak influence from the first-fill Oloroso cask.
Finish
Long and warming, with lingering dried fruit, dark chocolate, oak spice and a subtle sweetness.

Chances are you may have heard of this Fife farm distillery, but have never seen a bottle at retail? That’s because of huge consumer demand versus the small production from farmer and distiller, Francis Cuthbert, who focuses on quality, not quantity. Founded in 2005, Daftmill unlike many distilleries, waited until the whisky was ready. The inaugural bottle arrived 12 years later and since then we’ve seen a variety of single casks and seasonal batch releases entitled Summer and Winter. Distributed by Berry Brothers & Rodd based in London, the Lowland charms of Daftmill revive memories of Rosebank. The distillery takes terroir to another level with the farmer growing, distilling and maturing the whisky on the farm that started the whole process. It’s a very traditional Scottish model, lost in today’s world of efficiencies and scale. Daftmill is sought after and celebrated for some excellent whiskies.
